Cheese Broccoli Soup

4 cups cubed potatoes
1 onion, chopped
2 cups sliced carrots
2 cups celery, chopped
3 cups broccoli, chopped

Boil all veggies except the broccoli in 2 cups of water for 10 minutes. Add the broccoli and boil for 10 more minutes. Do not drain. Make the following sauce. Add to veggies and heat together, but do not boil.

Sauce

½ cup butter
1 T. flour
2 cups whole milk (use more flour to thicken if you don’t use whole milk)
1 pound velveeta cheese, cubed
1 t. dry mustard
¼ t. pepper
3 chicken bouillion cubes

In saucepan, melt butter. Stir in flour. Add milk and heat until thick, stirring constantly. Add cheese and seasoning.
